June 18 – Get your health on!

Roasted Veggies for Dinner

Madison is set on winning LivingSocial’s Biggest Loser Competition so we have been trying to eat healthy(ier). I think we always eat well, but we’re limiting carbs for a bit.  I roasted tomatoes, yellow squash, zucchini, red onions, garlic, and red potatoes to pair with balsamic rosemary chicken. So delicious and healthy. I used fresh rosemary to season everything (from my two-plant herb garden).

I have to say, a nice dinner was very rewarding after a VERY long day of dealing with Comcast and no internet service. Ugh!
