August 28 – Farm to Table

Wanna come over for dinner next time I make this?!?

Patting myself on the back right now because I made a delicious meal, all on my own, sans recipe. Okay, Eggplant Parm isn’t that difficult, but I sliced the eggplant so thin, and instead of breadcrumbs, I used parmesan cheese and mixed in ground pepper, red pepper flakes, basil, and garlic powder. After getting them nice and crunchy on the stove, I popped them in the oven and produced a cheesy Italian dinner – perfect with some smooth Cabernet. The best part of the meal was the fact that these eggplants were grown with love from Mom and Dad.

    Yes, I would love to join you. What a combo your creativity and your parents gardening skills. Actually, as of Nov. 15,2012 I will be retired and able to move around more. YEAH
