Second apple dish of the week: Apple Bake. It is no Swedish Apple Pie (MOM – I need the recipe!!) but it satisfied my baked apple craving. I’m not going to share the recipe, because while it turned out alright, I’m not a hug fan of the topping. The oats and almonds turned out pretty dry. The apples underneath were perfect- gooey and warm.
Guess who made it to the gym today!? My new goal is to go at least once a week. Week one: so far so good. =) I figure since I’m PAYING for a membership, I really should be going more. I find that if I pencil it into my purple calendar, I go.
